S'mores Caramel Apples!

Today Austin and I made our Caramel Apples in preparation of our big Halloween Party tomorrow night! They turned out really well! They are S'mores Apples! yum!! Recipe below! =)



S’MORES CARAMEL APPLES
6 Granny Smith apples
6 wooden sticks
1 (14 ounce) package individually wrapped caramels, unwrapped
2 tablespoons water
1/2 teaspoon vanilla extract
1 1/2 cups miniature marshmallows
1 1/2 cups crushed graham crackers
1 cup semi-sweet chocolate chips

Insert wooden sticks 3/4 of the way into the stem end of each apple. Place apples on a cookie sheet covered with lightly greased aluminum foil.
Combine caramels and water in a saucepan over low heat. Cook, stirring often, until caramel melts and is smooth. Stir in the vanilla. Dip each apple into the caramel and gently run apples around insides of saucepan to scrape off some of the caramel. Scrape excess caramel from the apple bottoms using the side of the saucepan.
Combine the miniature marshmallows and graham crackers on a dinner plate. Roll the apples in the mixture to coat. Place on the aluminum foil and chill.
Put the chocolate chips in a microwave-safe bowl. Cook in the microwave for 30 second intervals, stirring between each, until melted and smooth. Drizzle over the apples and return them to the refrigerator until ready to serve.

Hay Ride and Carnival

Tonight we went to the Carnival and Haunted Hay ride! we had so much fun! Austin got his hair sprayed spooky green! and Mommy got her face painted with a pumpkin! Our friend Shannon and 3 or her kiddos were with us for the Spooky Hay Ride!! The weather was chilly but it made it feel like a great fall night!

18 Month Well Check

Today was Austin's 18 month well check. Well checks are always fun because we get to see how much Austin has grown, but they aren't fun at the end because we usually get shots! Austin is 29.6 lbs and 32 1/2 inches tall. Right on track with his weight and a little tall for his age! He is ahead on a few milestones and right on track with others..so all in all he is PERFECT! When it was time for the shots of course Austin wasn't happy about it, but this was the first time there were no tears! My little baby is growing up! He was very excited to get a green band aid and a Thomas the Tank Engine sticker! Some fun things Austin's has discovered this month are walking backwards, walking down steps and up steps all by himself, saying new words, and almost getting the hang of using a spoon and fork! He is always on the go, very friendly and loves to play with the big kids! Oh how you amaze me every day little guy! I love you Austin!

5 Things that Made me Smile this Week

5 Things that Made me Smile this Week:

1. Gramz being in town. My mom was in town for a few days, and was nice enough to take photos for my Moms group on Monday. We went to the pumpkin patch and all the kiddos got their picture taken. It was so cute and lots of fun! I was excited for my Mom to meet some of the women in my group that have become close friends of mine. We are always sad to see Gramz leave town, but we had lots of fun while she was here

2. Going to the Library with Daddy. On Wed. Tim called me and said he was headed to the library to get some work done. We decided to go up there and join him! I'm sure he would have gotten more work done if we hadn't of come, but we couldn't pass it up! It was really fun for me to watch Tim having so much fun with Austin. Austin showed Daddy where all his favorite toys and books are at the library. He even showed him the cool Jeep! What a great break in routine!

3. Garage Sale! I'm not a morning person so the thought of getting up at six AM on a Sat isn't exactly thrilling, but I have to say it was fun! Several of the Mom's in my group brought over items to sell in our community garage sale. So we drank coffee, ate donuts, and sold some stuff to make some extra cash! We started a Christmas party fund with some of the profits from the sales.

4. Family Pot Luck at our House! Today we had over 30 people at the house! We did a Fall Family Pot luck. Everyone brought a dish to share, the kids played, the Men watched football upstairs in the "Man Cave" on our projection screen TV. I just love all the Moms in our group so it was great to see them on a weekend, and have all the husbands meet! I think Tim has a few new BFFS LOL

5. Watching Austin and Caleb wrestle. Caleb is my friend Shannon's 4 year old little boy who is so sweet! Today after some of the crowd had gone home, we were sitting in the living room. Caleb walks in, and we hear Austin laughing as he runs toward him, bear hugs him and tackles him to the ground! At first I was nervous that Caleb would be upset, but just like a big brother he started playing with Austin! It was sooo cute, and SO funny! I haven't seen Austin ever try and wrestle before but he knew exactly what to do and was laughing the entire time! Caleb is obviously bigger than Austin, but he wasn't rough with him at all! My favorite part was when Caleb came over to me and said "man he is tough!" Boys will be boys!!

Pumpkin Sunday

We had a wonderful weekend! Gramz, Papa and Uncle Matthew came down on Sat. I made my famous chili and corn bread for dinner, yum! Saturday we got up and went to the church pumpkin patch! It was lots of fun and we got some great photos! Austin was very excited to pick out his pumpkin! Tomorrow I have arranged for my Moms group to take pictures in the pumpkins! So look for more pumpkin pictures soon! and as always there are TONS more on Facebook =) Happy Fall!

5 Things that Made Me Smile

Ok so I didn't get to this on Sunday because we were traveling back to Texas from our trip up north! So this is a combo of things that made me smile last week..and so far this week =)

1. Meeting Molly and Maria
We went to Wisconsin over the weekend for Maria's wedding. I had met most of the Molepske extended family when they came to TX for our wedding 3 years ago, however Maria and her daughter Molly weren't able to make it. So Austin and I were super excited to be going to her wedding! Molly is such a sweet outgoing 12 year old! She came up to me and gave me a great big hug when we met! I wish they lived closer!

2. Watching Austin Shine
At the wedding Austin was a little ham..as usual! He walked around blowing kisses to all the ladies and was on the dance floor doing the limbo and having fun all night long! It was so nice to have so many people come up and tell us what a cute little boy he was and how well behaved he was! He really made me proud.

3. Sleeping in my own bed!
Although we had an amazing trip to WI and I wish we could have stayed longer, it was sure nice to get home and sleep in my own bed Sunday night! We were super tired from 4 flights in 3 days and all that dancing at the wedding!

4. Mom's night out
Last night my Moms group had a "Moms night out" at Starbucks! I got my favorite drink this time of year, a pumpkin spice latte. We had a big group this time! We sat outside and enjoyed the nice weather, and chatted all night! We closed down the place..again! I just love all the women in my Moms group. Its really refreshing to meet so many down to earth, REAL Moms who aren't superficial or try to make you feel bad about yourself. Everyone in the group is awesome! I'm lucky to have made such great friends.

5. Recipe Swap
Today we did another recipe swap! I am really excited to try out two recipes that I got from Jenny. She is a great cook and my inspiration! I hope to try her Buffalo Chicken Chili and Enchiladas some time next week! Yum!!

Say Cheese

Friday Morning we were off to Wisconsin for Tim's cousin, Maria's wedding! It was a very long day of traveling but Austin did pretty good considering he had been up since six am, had no nap, and was up way past bed time! We got to be apart of the rehersal dinner since Tim was reading in the wedding. It was so much fun meeting the rest of the Molepske Family and seeing those that we had not seen since our own wedding. Saturday was the big day! Austin looked so cute in his suit and "stole the show" as we were told several times! He was such a good boy! He sat nicely during the dinner and played with his cars. After dinner he walked around blowing kisses at all the ladies getting lots of "awww's" and "what a cute little boy". When it was time to dance Austin was ready! Austin just loves music and was so funny to watch! When the older kids were doing the limbo Austin sat on the side lines watching very carefully. After watching for a bit I guess he decided he wanted to join in! Austin walked up to the limbo stick (with plenty of room to walk under) and ducked as he ran under haha! I would say by the end of the night 80% of the people at the wedding knew who Austin was! lol He was such a flirt! And it was really nice to have so many people come up to us and tell us what a good boy he was.

The wedding was amazing, Wisconsin was beautiful, and seeing family was great! I wish we could have stayed longer! Austin was very upset that we had to leave! Maybe we will get to go back soon!
